BEST EVER 100% Whole Grain Cast Iron Cornbread

Growing up in the south, cornbread is served all winter long alongside soul-warming stews, chilis and soups. And this cornbread is the BEST EVER! It's 100% whole grain, free of refined-sugars and is made with healthy fat from butter and whole milk.

If you can whip up a box of Jiffy, you can have this healthy and delicious alternative in the oven in under 5 minutes.

Corn bread in Cast Iron Skillet

INgredients

1 cup whole milk
1 TB white vinegar or lemon juice
1/4 cup butter (melted) plus more butter to "grease the pan"
1 egg, omega-3
1 cup white whole wheat flour, organic
1 1/4 cup cornmeal, organic
1/2 cup honey or maple syrup
3 tsp baking powder
1/2 teaspoon pink sea salt

note

White, whole wheat flour is 100% whole grain, whole wheat. It is milled from hard white winter wheat rather than traditional red wheat. This results in a lighter-colored grain and a milder taste.

Directions

  • Heat oven to 375ºF. Grease bottom and sides of cast iron skillet with butter.
  • Warm skillet on low to medium heat over the stove.
  • Combine whole milk and vinegar in a measuring cup. Let sit for 5-10 minutes until milk appears curdled.
  • While the milk is hanging out and doing it's thing, combine flour, cornmeal, baking powder and salt in a mixing bowl.
  • Beat milk, butter and egg in large bowl.
  • Combine the wet and dry mixtures. (batter will be lumpy).
  • Pour batter into pan. You will hear it sizzle! Mmmm
  • Bake 15 to 20 minutes or until golden brown and toothpick inserted in center comes out clean.

Serve

Oh my! Look at the crumb! This cornbread may be 100% whole grain but you would never know it. It's moist and delicious. Serve it warm with European style sweet butter for a real treat.

Healthy 100% Whole Grain cornbread

Nutrition

Whole grain wheat and corn contain more fiber and protein. This helps slow digestion which can keep blood sugar under control. Also whole grains contain more vitamins and minerals. While this is a delicious, healthier alternative, remember to eat mindfully!

Substitutions

Vegan Friends- swap unsweetened almond milk for cow's milk, coconut oil for butter, maple syrup for honey and a flax egg for the omega-3 egg.
